Pumpkin Crumble Cake-Thanksgiving Dish #5

I shared this recipe last year before Thanksgiving and since then it has been quite the hit,
especially on Pinterest.
So I thought I would share it again in case you missed it a year ago.

This recipe is a yummy alternative for pumpkin pie.
My husband does not care for pumpkin desserts,
yet he thoroughly enjoyed this cake - he even had seconds when I made it!


Ingredients:

1 (18.25 ounce) package white cake mix
1 egg, beaten
1/2 cup butter, melted
1 (15 ounce) can pumpkin puree
3 eggs, beaten
1/2 cup white sugar
1/4 cup packed brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract
1/2 cup white sugar
3 tablespoons butter, softened

Preheat oven to 350 degrees F and grease an 8 X 8 pan.
Reserve 1 cup cake mix.
In a large bowl, combine the remaining dry cake mix with 1 egg and 1/2 cup melted butter.
Mix well, then pat into prepared pan.
In a large bowl, mix together the pumpkin, 3 eggs, 1/2 cup white sugar,
brown sugar, cinnamon, nutmeg and vanilla.
Pour over crust.
In a small bowl, combine reserved 1 cup cake mix, 1/2 cup sugar,
and 3 tablespoons softened butter.
Crumble over pumpkin filling.
Bake for 45 - 50 minutes.


Just look at that creamy pumpkin - yum! :)

You're killing me, Stephanie. Pound by pounds. :) This looks so GOOD! I find pumpkin pie to be too dense, but this appears light. Hope it's light in calories, too. Yeah, I know... :)

Oh wow, Stephanie, that looks amazing! The pumpkin is so creamy and I love the different textures. I will definitely be making this pie in the next week. It's only 7 am but I could eat a piece of that right now! lol
