Mexican Meatballs

Here is a tasty meal that is perfect for the family,
plus it's extra easy to make :)


Ingredients:

1 lb. ground beef
4 slices of bread, torn into small pieces (I used bread crumbs)
1/3 cup milk
1 egg yolk, beaten (reserve egg white)
1 tsp. salt
dash of pepper
1 egg white, beaten
1 cup cornflakes, crushed
oil
1 can tomato soup
1 small green pepper, chopped
1/2 - 3/4 cup water

Combine ground beef, bread, milk, egg yolk, salt, and pepper.
Form into balls.

Roll balls in egg white and then in the cornflake crumbs.
Brown in hot oil in skillet and then place in a slow cooker.

Combine soup, green pepper, and water.
Pour over meatballs.

Cover and cook on low for 6 - 8 hours,
or on high for 3 - 4 hours.

Serve over rice for a delicious supper.
(I added carrots and peas to my rice)

Good Morning Stephanie!

So funny.. I just made meatballs the other day. I like that these are a mexican version. I got the recipe copied and will be making them soon.

It's beautiful here today, the breeze is slightly cool and they are calling for rain, pray we get some. My hubby got our swamp cooler in last night-Hallelujah! It was a wee bit hot in here yesterday. :)
