Cinnamon & Raspberry Pound Cake Loaves

Won't you join me, sweet friends, in the kitchen today?
Cinnamon and raspberry filled pound cake loaves are on the menu.


This is what you will need to make these delicious sweet treats.
  • Ingredients:
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk, at room temperature
  • 2 teaspoons vanilla
  • 2 1/2 sticks unsalted butter, softened
  • 2 1/2 cups sugar
  • 6 large eggs, at room temperature

  • For Filling:
  • cinnamon and sugar mixed together
  • or
  • raspberry jam

Lets start baking. . .
Grease and flour two small loaf pans 

(mine hold 8 small loaves so I ended up with 16 pound cake loaves).
In a medium bowl add the flour, baking powder, and salt.
Whisk to combine.
In a small bowl add the milk and vanilla.


In a large bowl beat the butter and sugar together on medium speeduntil it is very light and fluffy. Beat in the eggs, one at a time, until everything is well combined.

Turn the mixer speed to low and add 1/3 of the flour, followed by half of the milk, 
then another third of the flour, the second half of the milk, and then the rest of the flour.
Once the last of the flour is added, mix until it is just incorporated.
Pour about 1/2 cup of the batter into each loaf pan (depending on your mini loaf size), 
smooth and then sprinkle some of the cinnamon and sugar mixture onto the batter 
then cover with about 1/4 cup of batter; smooth out the top.
If you are using raspberry jam just spread about a tablespoon onto half of the batter.
Preheat oven to 325 degrees F.
Tap the pan a few times on the counter to settle the batter. 
 
Let the cake cook, without opening the oven door, for 25 - 30 minutes,
or until a wooden toothpick inserted into the middle comes out
with just a few moist crumbs attached.
Let the cake cool in the pans for ten to 20 minutes
and then use a small knife and cut around the edge of teach loaf to make them loose.
Flip the pans upside down so that the small loaves come out of the pan.
Cool on a wire rack for at least 2 hours before serving.
You can make a glaze with confectioners' sugar, vanilla, and milk.
Drizzle on top of each pound cake loaf
and enjoy a tasty treat!

How special that you are spending time with him. I so wish I had a grandpa, but I was only a little girl when my grandpa on my mom's side passed away. I do remember him well though. :~)
