Chewy Lemon Cookies. . .Made From A Cake Mix


Happy Friday, friends!

Ah, the weekend is here. . .any special plans?

I had a busy week so I am hoping to simply kick back and relax.
Of course when I relax I have to have cookies on hand {{ smiles }}
These lemon cake cookies are so easy to whip up
and they are a delicious treat. . .perfect for a weekend at home.


Ingredients Needed:

1 (18.25 ounce) white cake mix
1/3 cup vegetable oil
2 eggs
2 1/2 teaspoons lemon extract 
(if you aren't a fan of lemon then use almond extract - it's just as delicious)
1 1/2 teaspoons vanilla extract
1/3 cup confectioners' sugar


Preheat oven to 375 degrees F. 

Pour cake mix into a large bowl. 
Stir in oil, eggs, lemon extract and vanilla extract until well blended. 
Drop teaspoonfuls of dough into a bowl of confectioners' sugar 
and roll them around until they're lightly covered. 
Once sugared, place on ungreased cookie sheet.
Bake for 6 - 9 minutes in preheated oven. 
The bottoms will be lightly brown and the insides will be nice and chewy.
I usually get about 3 dozen cookies.

Oh my...these look absolutely divine, Stephanie! I really need to try my hand at these! It must be the weekend for lemon as I will be making a lemon soda pop cake for a church picnic! We made these for my grandson's birthday last week but we used a strawberry cake mix they were so good and easy. i'll have to try the lemon also.

Wow! Those popped out from the computer screen they are so scrumptious looking! How easy is that recipe? :-)
Grandma Maxie loved a short bread cookie I made out of a cake mix. It became get favorite cookie later in her life.
It's amazing what you can make our of a cake mix.:-)
I know I shouldn't, but I think I will make these one day. I'll just share most of them with others. :-)

These look so scrumptious! I wonder if I could sub lemon juice for the lemon flavoring? I have so much juice I froze last fall when we had an abundance of lemons on our tree and would like to have uses for it.

These look delicious Stephanie...I love lemon. Have you ever tried mixing a box of lemon (or any flavor) cake mix with a small tub of cool whip? It makes such easy...and chewy cookies. The batter is sticky, but you scoop out a bit and roll it in powdered sugar before you put it on the pan. Yummy! My mouth is watering now...lol! I hope you have a lovely and restful weekend mu friend!

These look like the perfect little treat with a cup of tea! I make one similar but with chocolate cake mix and they're my son, Mike's, favorites. Don't you just love the ease of using the cake mix? I would love to try your recipe. The ones that I make are called chocolate crackles and they come from a Farm Journal Christmas Cookbook that I bought back in the 1970's.

How delightful do these look!!! I've made some cookies similar to this before but I forget what flavor I made- I've seen where you can also make them using a strawberry cake mix. I'm going to have to give these a try! Lemon is one of my favorite flavors in the summertime, and it's especially a favorite of my dad's! Anything lemon, he loves :)

We've had somewhat of a stressful week, waiting for my dad's x-ray results. Which turned out to be fine, so we're thankful for that! So I'm ready for some chill-out time ;) I'll have to stay inside to get that though, it's gotten really hot here. ;)

One word... Delectable! My mouth is watering as I saw these pop up on the screen, and I mourned the fact that I have neither lemons nor a cake mix in my pantry! I've seen a few cookie recipes made from a cake mix and these ones look really good. However, I'd be very tempted to grate a bit of lemon zest to this recipe as well. It is pretty and very aromatic. Great recipe, friend!

Oh my goodness, Stephanie! I made those cookies this morning just in time for breakfast, sigh... Those were amazing! Melt in your mouth and just the right amount of lemon.
I chose to have a cup of coffee with them, yes I said them, I won't tell you how many " them" is :-) I figured if I was going to have the sugar I just as well have the coffee too. Oh well, tomorrow is another day, clean eating can come tomorrow.:-)

I made these but with the almond as I did not have any lemon. Mine did not turn out quite so pretty but I think it may have had to do with my background noise. :) There were a couple little ones who wanted me. Anyway, the children that tried one liked them. We will make them again using lemon.
