Independence Day Shredded Beef Sandwich

Instead of the usual hamburgers and hot dogs for the the 4th of July celebration
how about something a little different. . .

Here is an appetizing sandwich that even my husband enjoys.
My hubby is not a sandwich lover, but I am {smiles}
so I decided to try this one on him and to my great delight, he loved it!
It's the perfect meal to enjoy with family and friends.

My country, 'tis of thee, sweet land of liberty, of thee I sing:
Land where my fathers died, land of the pilgrims' pride,
From every mountain side let freedom ring!
- Samuel Francis Smith -

Ingredients needed:

roast beef, cooked and shredded
{this is great for using up leftover roast}
bacon, cooked
iceberg lettuce, shredded
deli-style pickles
cheddar cheese, sliced
Thousand Island dressing {optional}
kaiser buns

I cooked a roast all day in the slow cooker so that is was nice and tender
plus it keeps the temperature down in the kitchen.
I rubbed the roast with salt, black pepper, minced garlic, chili powder, and cumin.
Like I said, you can easily use leftover roast.
You can also cook the roast the day before
and simply warm it up the next day.

Slice open the bun and warm in the microwave for 10 seconds or so.
Add the sliced cheese, roast beef, pickles, lettuce,
and about 1 tablespoon for Thousand Island dressing {if using}.

Serve with homemade fries and coleslaw for a delicious 4th of July meal.

To make the homemade fries simply slice some potatoes,
toss with olive oil, salt, pepper, garlic salt, and paprika.

Spread a piece of aluminum foil onto a baking sheet
and spritz with some oil.
Lay out the fries onto the prepared pan
and bake at 425 degrees F for about an hour.
Stir the fries a few times during the cooking process
so that they don't stick to the pan.

O beautiful for patriot dreams that sees beyond the years,
Thine alabaster cities gleam - undimmed by human tears!
America! America!
God shed His grace on thee.
And crown thy good with brotherhood
From sea to shining sea.
- Katharine Lee Bates -

May you have a wonderful
and blessed Independence Day!

And to all my sweet friends and family in Canada. . .
Happy Canada Day!

Yum! Looks de-lish :) I'm thinking of making some Ham & Cheese Sliders, but maybe with Turkey since we don't eat ham. Guess I should call them Turkey Sliders! I love homemade fries, too. So easy and much better than frozen.
Have a blessed week!!!

Good morning precious friend! Now this looks fantastic. Any kind of shredded meat (chicken is my preferred) makes for such a lovely sandwich - light enough to allow you to wait a while then get back in the water, on the volleyball court or just stay sharp to continue on into the night....ENJOY!

This sandwich looks and sounds so good! In our family, we like to make sandwiches with homemade french bread occasionally--I'm guessing this would taste good on that. :)
