Strawberry Cheesecake Tarts


Help yourself
to something sweet. . .




My lovely friends,
today I have an easy peasy
and oh-so-tasty little treat for you. . .
and just in time for a Valentine's tea party.




These delicate little tarts have 4 simple ingredients.
To make it extra easy
I used ready-to-eat phyllo tart shells 
which I purchased at my local grocery store
in the frozen department.
All I had to do was fill them.




Ingredients:

1/2 cup heavy whipping cream, cold
4 oz cream cheese softened
1/4 cup granulated sugar
1/4 cup strawberry puree

First of all,
to make the strawberry puree you will need 
1/2 cup of fresh strawberries, stemmed and hulled.
Then, simply puree the strawberries.

Whip the heavy cream until stiff peaks form.
In a separate bowl, beat cream cheese and sugar until smooth.
Fold the whipped cream and strawberry puree
into the cream cheese mixture.
Refrigerate for about 2 hours,
or until set.

Spoon the mixture into the shells
and refrigerate until you're ready to eatthem.
You can also top the tarts with some chopped strawberries.
** The phyllo tart cups will get soft if you leave them overnight
so I would make these the day you are going to enjoy them**




These tarts are light and fluffy
with just a hint of sweetness and I must say
they are a lovely addition to any tea party.

I am beginning to plan a little Valentine's celebration at home, and already have a chocolate dessert, but have been looking for something small and, well, not chocolate.
