Snickerdoodle Cupcakes

Hello, faithful friends and followers!
Have I got a delightful treat for you today. . .
snickerdoodle cupcakes!

My husband enjoys his snickerdoodle cookies
so when I found this recipe for cupcakes well,
I just had to try it and oh, am I ever glad I did!

These cupcakes are amazing!
Seriously!

Ingredients:

Cupcakes
2¾ cups all-purpose flour
3 teaspoons baking powder
1 teaspoons ground cinnamon
½ teaspoons salt
¾ cup shortening
1⅔ cups granulated sugar
5 large eggs
2½ teaspoons vanilla extract
1¼ cups milk

Preheat oven to 350F degrees.
Line muffin tins with cupcake liners.
Set aside.

In a medium bowl, mix flour, baking powder,
1 teaspoon cinnamon, and salt.
Set aside.

In a large bowl, beat shortening
with electric mixer on medium speed for 30 seconds.
Gradually add sugar.
Add eggs, one at a time, beating well after each addition.
Beat in vanilla extract.

Slowly add flour mixture and milk,
mixing until just combined.
Do not overmix!

Pour the cupcake batter into the cupcake liners
{about 3/4 the way full}.

Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean.
Allow cupcakes to cool on wire rack before frosting.

To make the frosting. . .

Cinnamon Buttercream Frosting
1 (2 sticks) cup unsalted butter, softened
2 ½ cups powdered sugar
2 teaspoons vanilla extract
1 tablespoon heavy whipping cream
1 tablespoon ground cinnamon
Cinnamon-sugar, to sprinkle on top

I want buns of steel,
but I also want buns of cinnamon.
**Saw this quote and it made me giggle.**

Mix softened butter on medium speed
with an electric or stand mixer.
Beat for 30 seconds until smooth and creamy.

Add powdered sugar, heavy whipping cream,
ground cinnamon, and vanilla extract.
Increase to high speed and beat for 3 minutes.
Add more cream if needed for spreading consistency.

Frost cupcakes using a piping bag or knife
and sprinkle with cinnamon-sugar.

Makes 24 cupcakes.

You can find the original recipe by clicking here.

Thank you for visiting today, sweet friends.
I hope you're able to give these cupcakes a try. . .
you won't regret it!

Hugs and joy to you!

I couldn't possibly end this post
without a few pictures of the kittens.

Good morning, sweet friend! We both must have snickerdoodles on the brain, as I have a recipe cut out for snickerdoodle donuts that I want to make. Your cupcakes look amazing, and I know your hubby must've been thrilled with them (your son, too). I'm sure my grands would love making them.
I must tell you that I'm reading a book that you highly recommended...A Heart Most Certain, and I'm enjoying it. Thank you for your review.
Hope you're having a wonderful week. Love and hugs to you!

I didn't guess what "shortening" means... oh, it's like butter or margarine. :)
The kittens look super cute. How do you know which one is Melly and which one is Duke?
Big hugs! xx

We recently found a recipe for a Snickerdoodle loaf and it's good too. Must try these cupcakes - we have a grandson that enjoys getting some baking from grandpa (who does the baking).

Stephanie, you make the most amazing desserts. These Snickerdoodle cupcakes look scrumptious, and the cinnamon buttercream frosting, oh my! Your pictures always show how wonderful your goodies look. I wish I had one to go with my coffee this morning. : )

ps thank you for the special comment about on my 'curly hair' post. Oh, how I wanted straight hair like you growing up, but I've learned to appreciate what my
parents passed on to me, and am thankful that I even have hair to curl or straighten. : ) Have a blessed Wednesday, Stephanie.

The "Buns of Steels..." quote cracked me up too. Over the past few days, I've been enjoying some cinnamon bun (safe to eat) cookie dough from a local shop. I will start eating healthier tomorrow (June 1st). Ha!

I can't even remember the last time that I had a snickerdoodle. What a yummy idea to create a cupcake version!

Oh my, these do look delicious! Your photography as always is so pretty! You have such talent with your camera and staging for photos. The kittens are getting so big and are so adorable. I wish I had one to cuddle right now. I have been wanting to get another kitten but with three cats and two large dogs, we really don't need another one. But, oh how I want one. I will just enjoy seeing your little sweeties instead. Have a blessed and lovely weekend sweet friend.
