This recipe is a yummy alternative for pumpkin pie.
My husband does not care for pumpkin desserts,
but he thoroughly enjoyed this cake - he even had seconds when I made it!
Ingredients:
1 (18.25 ounce) package white cake mix
1 egg, beaten
1/2 cup butter, melted
1 (15 ounce) can pumpkin puree
3 eggs, beaten
1/2 cup white sugar
1/4 cup packed brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract
1/2 cup white sugar
3 tablespoons butter, softened
Preheat oven to 350 degrees F and grease an 8 X 8 pan.
Reserve 1 cup cake mix.
In a large bowl, combine the remaining dry cake mix with 1 egg and 1/2 cup melted butter.
Mix well, then pat into prepared pan.
In a large bowl, mix together the pumpkin, 3 eggs, 1/2 cup white sugar,
brown sugar, cinnamon, nutmeg and vanilla.
Pour over crust.
In a small bowl, combine reserved 1 cup cake mix, 1/2 cup sugar,
and 3 tablespoons softened butter.
Crumble over pumpkin filling.
Bake for 45 - 50 minutes.
Mmmm ... Enjoy!

This looks really good, though I shouldn't eat it because it has alot of butter in it. But, I'm going to try it anyway, as my husband loves sweets. I may not make it until January though, as I'm already "booked-up" with too many baked goods to make for the end of the year. :)

Over the last 15 years, I have made including pecan pie as a Thanksgiving tradition. I did not grow up eating pecan pie but found that I love it. I am looking this year at which recipe I want to try. I purchased special maple syrup this year and am hoping that it makes the pie even more delectable...as promised in the recipe I am considering.
