Cinnamon And Vanilla Pancakes

I have a weakness for pancakes - I love, love LOVE them!!!
I think I could eat them for breakfast, lunch and supper if I was allowed :)
And I like pancakes that are cake-like, not dry and crumbly.

I have a recipe that I love and always use
and I thought since it's the weekend (a great time to enjoy pancakes)
you might enjoy the recipe.

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1.5 teaspoons ground cinnamon
2 cups milk
2 eggs
4 teaspoons Crisco, melted
2 teaspoons vanilla

In a bowl, mix dry ingredients together.
 Beat eggs and milk together; add melted Crisco then stir in vanilla.
Blend wet and dry ingredients thoroughly.

Melt butter (you can use Pam, but I like butter) on hot griddle.
Pour batter on hot griddle.
Turn pancakes when top is covered in bubbles and edges start to brown.
Cook on second side until just golden brown.

Serve with butter and syrup.
Mmmmm....so good!

Whenever I eat pancakes I think of my Grandma Dee.
When I was a young girl, 
she taught me to put butter on my pancake, sprinkle it with sugar
and then roll it up to eat it.

This sounds (and looks) divine! Can the Crisco be substituted? My hubby's heart condition does not allow that. :(

My gracious, these look soo delicious!! I actually saw your post last night on my blogroll, and this morning I woke up to make breakfast and felt like having pancakes so badly because I remembered the photos in this post, hehe.
