Tickle-Your-Tastebuds Rhubarb Cobbler

The rhubarb is finally making its wonderful appearance
in my garden ... yay!

This rhubarb cobbler is a favorite in our household
and we enjoy it every spring.


1/2 cup (1 stick) butter
1 cup flour
1/2 cup sugar
2 teaspoons baking powder
1/2 cup milk
2 teaspoons vanilla
2 cups rhubarb - cut into 1/4 inch pieces
1 cup hot water
1 cup sugar

Preheat oven to 350 degrees F.
Slice butter and place in a 9" baking pan;
place pan in oven to melt butter.

In a mixing bowl,
make a batter with the flour, 1/2 cup sugar,
baking powder, milk, and vanilla.

Once the butter has melted,
pull the pan out of the oven
and spoon the batter onto the butter.

Place the sliced rhubarb over the batter.

Stir the 1 cup of sugar into the hot water
until the sugar is dissolved.
Slowly pour over the rhubarb.

Sprinkle with cinnamon.

Bake for 40 - 55 minutes
or until the top is golden brown.

Serve with ice cream and enjoy!

I love rhubarb anything! It doesn't grow well where I live, but I thankfully I get it from my mom and freeze it. Just made a rhubarb/blackberry crisp for dessert last night! Yummy!!

Oh my, this looks so good and easy too!! Rhubarb is one of my very favorites but I don't make it often as my hubby doesn't care for it, he can look the other way with this one though..hehe.

Another delectable looking recipe! I'm not sure I remember what rhubarb cobbler tastes like. I think I have had it before, but not since I was quite small.

This looks so good! Growing up, we often had rhubarb sauce over pancakes. My children know nothing of this delicious delicacy.

I was trying to figure out if it was a fruit or vegetable, Wikipedia says it it a vegetable. One site claimed it was an herb. It seems most like a fruit to me. What do you think?

I think I shall find myself some taste-bud tickling rhubarb and make your cobbler recipe.

Oh, Yummy! Rhubarb is a big crop around here and now I have the perfect recipe! My Grandmother always grew rhubarb and she would let us eat it raw. But this is much better! Thank you for the recipe!

Oh that peach cobbler was amazing! We love rhubarb and will give this a go! I've tried to grow rhubarb here but it doesn't do so well in this heat. Grew tons of it in Montana though!

Believe it or not, but I have grown rhubarb for the first time in my life this year, It is still a very small plant, but there are about 5 sticks there, will give it a chance to get bigger and maybe will get one cup full from it!! Will keep this recipe for next year! Thanks for sharing!

Looks heavenly, my dear! I grew up eating rhubarb stalks right out of the garden...dipped it right in the sugar bowl and chopped 'em down! It is truly a wonderful childhood memory...and Mom made pie and cobblers often...many times adding strawberries! his recipe looks so easy too....I think I will try it! Thanks for sharing!
