Strawberries N' Cream Cookie Bars

Let me just say that your comments are a ray of sunshine and I want to 
thank you for taking the time to say a word or two because your words are appreciated.

I picked up some strawberries the other week at the grocery store
and oh my, were they tasty!
They were sweet, extra juicy, and reminded me of the berries my mom, sister, and I
would pick in the strawberry fields when we lived in Canada.

I found a recipe on Pinterest that had my mouth watering
so I decided to try it out and boy was I thankful I did!
It was amazing :)

Don't waste any time, friends. . .you should make this yummy treat now :)

1 pouch (1lb 5 oz) Betty Crocker sugar cookie mix
1/2 cup butter, softened
1 large egg

1 cup white chocolate chips
1 package (8 oz) cream cheese, softened

3 cups sliced strawberries
1/2 cup granulated sugar
2 tablespoons cornstarch
1/3 cup water

Preheat oven to 350 degrees F.
Lightly grease a 9x13-inch baking dish with non-stick spray.
In a large mixing bowl, mix the sugar cookie mix, butter, and egg together.
Press the dough into the prepared pan
and back for 15 - 20 minutes or until golden brown.
Cool completely.

In a small, microwave-safe bowl, microwave chocolate chips for 45 - 60 seconds.
Stir and heat again until chips are smooth.
In a medium bowl, beat cream cheese with an electric mixer until smooth.
Stir in melted chips and spread over cooled cookie mixture.
Refrigerate while making the topping.

In a small bowl, crush 1 cup of strawberries.
In a 2-quart saucepan, add the crushed strawberries,
sugar, cornstarch and water.
Cook over medium heat, stirring constantly until mixture boils and thickens.
Remove from heat and cool for 10 minutes.
Fold in remaining strawberries and spoon over filling.
Cover and refrigerate for an hour, or until set.

Enjoy the fresh taste of summer!

A yard sale find for 50 cents...and so far it is really an excellent devotional. And am reading a Gladys Taber book 'Another Path' written after the passing on of her friend Jill. Sadly, I don't think she was born again...but so loveable and her writing is comforting to read. We are blessed with a wonderful used book store here. sigh ....of contentment. =)

I ADORE strawberries, and this is one of my favorite summer bar recipes. I've made them many, many times for church buffets and people rave about them!
