Good apple pies are a considerable part
of our domestic happiness.

Apples remind me of the joys of autumn and these tasty apple pie cookies
are the perfect way to welcome the days of sweet fall.
Here is the recipe, my friends. . .
Ingredients:
2 pie crusts
caramel topping
10 oz apple pie filling {store bought or make your own}
milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup sugar
Preheat oven to 350 degrees F.
Spray a cookie sheet with nonstick spray and set aside.
Sprinkle some flour on the counter
and roll out the pie crusts
{you can use store bought pie crusts for a quicker cookie}
Spread a thin layer of caramel onto one crust.
Chop apples to make them smaller
and spread over the caramel.
Cut 1/2-inch strips out of the other crust
and use them to make a lattice;
place the strips on top of the apples.
Using a round cookie cutter
cut out circles and place on the prepared cookie sheet.
Brush the tops with a bit of milk.
Combine the cinnamon, nutmeg, and sugar
and sprinkle on top of the cookies.
Bake 25 - 35 minutes
or until golden brown.
These apple pie cookies taste incredible hot out of the oven.
The cookies can be stored in the refrigerator,
but I will mention that they tend to get soggy after only a couple of days in the fridge
due to the caramel and the juice from the apples.
Brew yourself some coffee
or make yourself a cup of hot tea
and simply enjoy the taste of autumn :)
