Don't you just love the summer months
when you can sit outside during the evening
and enjoy a meal cooked on the grill?
Oh how I love the scent of burgers, steaks, and chicken
cooking on a hot sizzling grill.
Mmmm. . . the smell of summer :)
The other week my husband and I tried a delicious new marinade
and oh my, was it ever tasty!
Typically I will eat only one small piece of chicken and be quite content,
but this marinade was so yummy that I actually ate another half piece of chicken.
Along with the chicken I made some vegetable kabobs
which consisted of yellow squash, zucchini, cherry tomatoes,
jalapenos, onions, corn on the cob, and pablono peppers.
Normally I'm not a tomato-kind-of-girl,
but the tomatoes on the kabobs were oh-so-tasty.
I let the vegeables sit in some Italian dressing before grilling
and the flavor was just right.
Now for the marinade recipe. . .
Chicken Marinade:
¼ cup extra virgin olive oil
2 medium cloves garlic, finely minced
1 tablespoon finely minced fresh rosemary
finely grated lemon zest from 1 medium size lemon
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Combine all the ingredients in a ziplock bag,
seal it and shake it up.
Add the chicken {I used chicken tenders}
and allow it to chill for at least an hour in the refrigerator.
The marinade should be enough for 2 pounds of chicken.
Cook the chicken on the grill and enjoy!

I make that marinade recipe, only I add a little honey for a bit of sweetness. Your meal looks yummy. I love the smell, taste and layer Rosemary gives to a meal. Have a delightful week.

Oh my! What a perfect recipe for summer days :) We love grilling out and actually tend to do so even in the autumn and winter, simply because the warmth from the fire feels so good. So I am always looking out for new and tasty recipes to try, especially chicken recipes as that is the meat that we tend to eat the most of. {{smiles}}

this looks really good!! i prefer to make vegetable kabobs, like you did, and cook the chicken separately, since the cooking times for each are different. chicken can be tricky to cook on the grill. it all looks beautiful plated!!

This sounds just like the chicken I made last night! Here is another way to have the chicken....grill whole cobs of corn and then cut the kernels off into a bowl of salad greens. Add some avocado, grated parmesan, the chicken and any olive oil/lemon dressing and you have a delicious salad. If I didn't just have it, I'd want this chicken tonight!

Thanks for the recipe, we have an herb garden and just this morning when watering it I told myself I have GOT to get using the rosemary - the thyme, basil and oregano I use often - the dill occassionally but I usually use my powdered rosemary. It's easy and I don't have to deal with the sticks - but the way you used it we're definately trying soon!

This chicken dish sounds absolutely delicious! I love Rosemary--one of my favorite spices! I tried to grow it, bought the most beautiful big plant but I could not keep it alive! Yummy! This looks so delicious! I love grilling, especially since my husband does it! hee, hee A good marinade can make all the difference, and yours sounds wonderful. I love roasted vegetables, but we don't normally grill them. I just got a pan for grilling them on the grill; looking forward to using it.
