Sweet Lemon Lush Dessert

Happy day, my friends!
Today I have another delicious treat for you. . .
a sweet lemon lush dessert
that is simply perfect to enjoy during the summertime.


For the Crust:
1 cup butter, softened but not to room temperature
2 cup flour
1/4 cup sugar
1/2 c. pecans, chopped in small pieces

For the Cream Cheese Layer:
2 (8oz) packages Philadelphia cream cheese
1 c. powdered sugar

For the Pudding Layer and Topping
2 small packages Jell-O instant lemon pudding mix
3 1/2 c. cold milk
2 cups freshly whipped cream
3 tablespoons sugar
lemon zest, to garnish (optional)

* * * Live your life with zest * * *

Stir together butter, flour, sugar, and chopped pecans in a mixing bowl. 
Press into a 9x13 baking dish and bake 15-20 minutes at 350°, 
or until a light golden brown. 
Remove from oven and set aside to cool.

Beat together cream cheese and sugar until creamy and smooth. 
Spread over cooled crust.
In another mixing bowl, whisk together pudding mix and milk. 
Allow to sit for 5 minutes to thicken up a little. 
Spread on top of the cream cheese layer. 
Cover and place in the fridge for 1 hour.

Add the 3 tablespoons of sugar to the cream and whip until nice and fluffy.
Spread whipped topping over the pudding layer. 
Cut into 18-24 pieces and garnish with fresh lemon zest.

My dear friends,
I just found out a good friend of mine in South Africa
just lost her home to a fire.
Many of you know sweet Kelly-Anne
and on her blog this morning was a post about her home burning to the ground.
Thankfully she and her family are safe,
but oh, what heartbreaking news!

This is one of my favorite recipes! We also make a variation of this recipe that calls for a layer of chocolate pudding and a layer of vanilla pudding, in place of lemon. Both are delicious!

Yum yum ! So refreshing . Wish I had a slice . Oh I'll pop over to hopefully be an encouragement . We lost our home in 1984 to a fire dear Stephanie . Lemon ANYTHING is always on my list and this stuff looks amazing! There was a lady who used to go to my church who would bring this to all of the potlucks and I always looked so forward to it. I heard about sweet Kelly-Anne's horrible ordeal first thing this morning on her blog. What a tragedy that they lost their home but what a blessing they were able to get out in time! I my goodness, I can only imagine what they are going through right now. My heart and prayers are with her and her family.

Mmmmm.....haven't had lemon lush since ????? My mom used to make it, and I probably have once or twice. It's delicious!
My heart goes out to Kelly-Anne - she's such a sweet person! Glad her family and animals are safe though!

I have made this luscious Lemon Lush dessert, my friend, and oh my, it's a perfect summertime treat. I've only used Cool Whip, however, in place of the heavy whipping cream, and I'm sure that your version is even more lush.

How wonderful and tasty does this dessert look?!?! I love lemon-flavored desserts, especially in the summer. I also love desserts that are cool and light in the hot weather, so this is right up my alley! I'm thinking that this recipe needs to be added to my notebook for me to make soon {{smiles}} Thank you for sharing!

I was shocked and broken-hearted at events that took place at Kelly-Anne's home. When she contacted me this morning, my heart just sunk so deep. How terrible for her family, but praise and thanks be to God that they are all safe and able to be in a safe place for now.

Good morning Stephanie!

That lemon, oh does this remind me of my childhood summers. We had lemon and lime trees in our garden and my mother would make lemon meringue pie. It was best east right out of the oven (with about an hour for cooling time, of course!) because after going in the refrigerator, in a few days the meringue would slide off the lovely lemon custard.

Oh this Lemon Lush caught my eye! Anything cream cheese and lemony with real whipped cream, such pure delight in every bite! Thanks for sharing this recipe, I plan to use it at an upcoming potluck!

And my heart just breaks at the terrible news of Kelly-Anne and their family's loss! I can't even imagine how horrible it must be, a huge disaster in their area! 10,000 people have been displaced, and 8 lives lost. So thankful they are all safe, including their animals too. I haven't heard any more from her, but continuing to keep her and their sweet family in my prayers!
