Apple Butter Week: Apple Butter Snickerdoodles

A happy hello to you, friends!
On Monday I shared an apple butter pie recipe,
on Wednesday I shared some apple butter streusel muffins,
and today I am going to share apple butter snickerdoodles.

I made my own apple butter for the apple butter recipes 
and you can find that recipe by clicking HERE.

Now let's make some cookies,
beautiful friends of mine!

- - Ingredients - -
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter softened
1 1/4 cup granulated sugar + 1/3 cup divided
2 large eggs
1 tablespoon vanilla extract
1/2 cup apple butter
1/2 teaspoon cinnamon + 1 teaspoon divided

Whisk flour, baking powder, and salt in a medium bowl. 
Set aside.
Cream butter and 1 1/4 cups sugar in a mixer until fluffy. 
Mix in eggs, vanilla, 1/2 teaspoon cinnamon, and apple butter.
Beat just until mixed. 
Add in flour mixture and mix until just blended together. 

Chill your dough at least 4 hours.
This dough must be cold before baking. 

Because of all the butter and apple butter, 
the cookies will spread quite a bit if you skip the chilling!
Preheat oven to 350 degrees F.
Line cookie sheets with parchment.
Place 1 teaspoon cinnamon and 1/3 cup sugar in a small bowl.
Scoop balls of cookie dough
 and roll them in the cinnamon sugar.
Place on your cookie sheet. 
Bake cookies for 11-12 minutes for slightly underdone, 
13-14 minutes for fully done.
Cool slightly before removing from cookie sheets.

Thanks for another yummy apple butter recipe!
Looks delicious. I might just make some apple butter pancakes or waffles this weekend. The weather is stormy and cloudy and a warm pancake breakfast sounds just right for such mornings.

I don't think I've ever had snickerdoodles! I'd love to try one of your apple butter snickerdoodles. I was at a new tea shop today and I couldn't resist getting some "Candied Apple" black tea.

Apple butter takes me back to my childhood and helping my mother bake bread. I loved it because baking bread meant we would have the dough for making fried bread which, while hot from the oven, would be dunked in home-made apple butter! My mouth is watering just thinking about it! Following Apple Butter Week with lots of interest...and hunger. :)

Snickerdoodles are one of my favourites, but never would have thought of making them with apple butter. We actually had snickerdoodle bars last week and they were soooo good!

Now here's a trend for autumn I could quickly jump into! I'm not much of a fan of pumpkin or pumpkin pie spice. I've leaned hard upon spice cakes and apples desserts for autumn, but apple butter is one of my favorite things on cool autumn mornings. I shall be happy to try these recipes. Thank you for sharing them this week.
