Hello, beautiful friends!
Today I have an extra sweet treat for you,
melt-in-your-mouth sandwich cremes.
I shared a picture of these cookies
on my Valentine's tea post last week
and several of you lovely ladies asked for the recipe.

Now let's get to the cookie recipe!
- - Melt-In-Your-Mouth Sandwich Cremes - -
Ingredients:
1 cup butter, softened
1/3 cup heavy whipping cream
2 cups all-purpose flour
sugar for cookie coating
In a large mixing bowl,
combine the butter, cream, and flour.
Cover and refrigerate for 1-2 hours,
or until the dough is easy to handle.
Divide the dough into thirds
and on a floured surface,
roll out the dough to 1/8-inch in thickness.
Cut with a floured cookie cutter.
Place the cutouts in a shallow dish
filled with sugar, turn to coat.
Place 2-inches apart on a baking sheet
lined with parchment paper.
Back at 375 degrees F for 7-10 minutes.
Remove to wire racks
and cool completely.
Filling:
1/2 cup butter, softened
1-1/2 cups confectioners' sugar
2 teaspoons vanilla extract
food coloring
In a mixing bowl,
cream butter and sugar.
Add vanilla and tint with food coloring.
Spread about 1 teaspoon of filling
over half of the cookies;
top with remaining cookies.
Just look at this flaky goodness,
my friends.
Yes, these cookies
will melt-in-your-mouth.

Some of you also asked about the Lamingtons recipe
that I shared on my post last week.

The recipe called for dried coconut
which I could not find
so I used fresh and while it tasted good,
I think dried would have been much better.
Also, I did not make the chocolate syrup
that the recipe calls for,
but rather made one with confectioners' sugar.
Here is the recipe for the glaze icing:
1 pound of sifted confectioners' sugar
3 tablespoons of butter, softened
1/2 cup of milk or water
(you may need a little bit more if the glaze is too thick)
food coloring
(add it before you heat the glaze
and add it sparingly if you want soft pastel colours)
Mix it all together in a small pan
and heat it gently until warm and pourable.

Such wonderful recipes, the photos are amazing. I loved the look of the book, a generous giveaway it would be wonderful to share it with my Grandchildren for which I have six. I do understand if you do not want to include overseas as the postage can be very expensive.

At first I thought they were finger sandwiches. I cut my crusts off when I eat sandwiches. Back in my days of my wedding reception. I had those kind of sandwiches at the church . After saying I do at the alter. Only my sandwiches were colored the bread. So this brings back memories. My love of my life three months ago had a severe stroke leaving him mostly paralysed. So my moments of our wedding of 58 years married are precious. Now for sure. I am moving closer to the hospitial so I can visit him closer then having daughter drive so far away hours to see him. Your blogs are so nice for me to look through and coment some.
